Sweet Potato Cake
Ingredients
1 Kg sweet potato grated
1/2 Kg coconut - 1/2 cup
1 cup white sugar
1 1/4 cup coconut milk
3 tablespoon custard flour
50 grams butter
1 1/2 cups of self rising flour
Method
Beat the custard flour till fluffy.
Add the butter to sugar and beat well. Add the sweet potato and 1/2 cup grated coconut. Mix well.
Add all the other ingredients to the mixture and mix well.
Pour the mixture into a greased baking tin and steam it for 40 minutes before baking it .
Pre-heat oven to 180
o
c. Place the tin inside. Bake at 180
o
c for 40 minutes.
