Orange Baked Chicken
Ingredients
- 4 boneless, skinless chicken breasts, halved
- 2 Tbsp butter, melted
- 1/2 tsp salt
- Freshly ground pepper
- 3 Tbsp flour
- 1/4 tsp dry mustard
- 1/2 tsp cinnamon
- 1/8 tsp ground ginger
- 1&1/2 cups orange juice, boiling
Method
- Preheat oven to 375 degrees.
- Place chicken breasts in baking dish.
- Brush with melted butter.
- Sprinkle with salt and pepper. Bake 15 minutes, uncovered.
- Put remaining butter in small saucepan.
- Add flour, salt, mustard, cinnamon, and ginger.
- Cook, stirring, 2 to 3 minutes.
- Remove from heat and pour on boiling orange juice, beating vigorously
with a wire whisk.
- Cook, stirring, 5 minutes or until thickened.
- Pour over chicken and bake another 15 minutes.
- Set oven to broil and brown chicken for 2 to 3 minutes before serving.
