Ingredients 

  • One Egg
  • Chopped Onions
  • Chillies To Taste
  • Chopped Tomato
  • Coriander
  • Salt & Pepper To Taste
Method 
  • First separate the yolk from the white without breaking the yolk. 
  • Then whisk the white and add all the above ingredients (except the yolk) and whisk well. 
  • Heat the oil in a (non-stick) pan and then pour the egg-white mixture, which then becomes like an omlette. 
  • Carefully add the egg yolk in the centre of the omlette without breaking it. 
Serve with toast, butter and  fruit-juice.
