Mixed Vegetable Pickle
Ingredients
- 1/4kg of carrots
- 1/4kg of tomatoes
- 1/4kg of beans
- 1/4kg of tindoli
- 1/4kg green chillies
- 1/4kg cauliflower
- 1/4kg brinjal
- 1 small size Radish
- 1/4kg capsicum
Masala Required
- 150 gms Mustard powder
- 100 gms Red chilly powder
- 50 gms Pickle powder (ready mix)
- 100 gms tamarind.make the juice of the tamarind
- 100 gms vinegar
- 1/2 kg oil
- Salt as per taste
Method
- Cut radish and capsicum into long pieces.
- Soak capsicum & radish in 1/4th tsp haldi & 2 tsp rock salt.
- Cut the remaining vegetables fine and fry them in the oil.
- When the vegetables are half cooked add in the tamarind juice.
- Add in the masalas cook for about 5 mins.
- Then add in the capsicums and radish.
- This pickle can be eaten after two days.
