Spicy Vegetable
Ingredients
- 1 cup mixed vegetables (include broccoli, asparagus, celery
etc if you wish)
- 1 large red onion
- 1/2 bunch cilantro
- 3 tomatoes or 1/4 cup tomato puree
Method
- Combine 2 tsp.coconut, 1 tsp. poppy seeds, 2-3 garlic cloves, 1"ginger,
5 red chillies, 1/2"cinnamon stick, 4 peppercorns, 1/5 tsp.
- Dhania seeds, 4 cloves,a little mace and nutmeg.
- Cook the vegetables.
- Heat oil in your pan. Temper with Jeera and slit green chillies.
- Add onion and fry till brown. Add masala pdr. Fry for 30 seconds.
- Add tomatoes/puree.
- Add salt and cook till oil floats on top (about 10-15 minutes).
- Add cooked vegetables and simmer for 10 minutes.
- To make the gravy creamy, add 1/2 cup of milk.
- Garnish with cilantro leaves.
Serve piping hot with phulkas,puris or rice. |
