Stuffed Potato 

Ingredients 

  • 4 oval shape potato 
  • 250 gm green peas
  • 4 medium size tomatoes
  • 1/2 tsp. cumin seeds 
  • Mustard seeds
  • 5, 6 curry leaves
  • Salt 
  • 1 tsp. garlic paste
  • 1 tsp. garlic paste
  • 1, 2 green chilies
  • 1/2 tsp. red chilly powder
  • 1/2 tsp. Hot spicy powder
  • 1/2 tsp. turmeric powder
Method 
  • Peel potatoes and make 2 parts of each potato. 
  • Carve these half potatoes like shape of bowl. 
  • Keep these cavities in deep water. Freeze it for 2 hours. 
  • Cut each tomato in four parts, then cook in microwave for 6 to 7 min. till its skin becomes soft. Grind it in mixer. 
  • Heat oil in pan, add cumin and mustard seeds and curry leaves. 
  • Add 1/2 garlic & ginger paste, red chilly powder, turmeric powder, hot spicy powder, tomato puree and salt. Bring it to boil. 
  • Heat little oil in pan, add mustard seeds, when it splutters add cumin seeds, curry leaves, garlic, ginger paste, turmeric powder. Add peas, salt and fry it. 
  • Dry potato carved halves by paper napkin. Grease little oil to each halves. Cook in microwave for 10 min. till it is cooked well or deep fry in oil. 
  • Stuff these potato halves with peas 
  • Pour hot puree in serving bowl and put these stuffed potatoes in it.
